Aux belt question?

Hi all,
I want to convert my puma engine to run without air con and without a powersteering pump. Just wondering if anyone knows if this is possible and what mixture of parts will be needed??

To remove the aircon just take it off and use a smaller belt. No parts required other than the belt. To remove the power steering would require changing the steering rack for a non-pwr rack. Most likely a mk4 fiesta 1.0 crossflow rattler, bout 97-2001 ish. Is possible but why? Track car maybe?
