Right, now you two have finished flirting, I'll update this thread....

Drained all the coolant... again!
Removed thermostat and felt around the pump impeller. All feels normal as far as I can feel! Impeller turns when pump pulley is turned. Seems tight on the shaft.
Put new thermostat in a cup of freshly boiled water... Didn't really open.
Tried the same with the old thermostat and that opened a bit:

For now, I've left the thermostat out, but left the outer sealing ring in to seal the gap between the block and stat housing.
Radiator goes hot, all pipes and heating, with temperature while driving sitting around 72 degrees +/- couple of degrees.

Will leave it without a stat to see how she goes.

Will be returning the stat to Ford.
